The Michelin-starred restaurant in New York and Miami blends the conviviality of Korean barbecue with the spirit of a classic American steakhouse.

At its COMO Orchard address, COTE Singapore marks the brand’s first concept to combine dining and entertainment in a single destination. The restaurant features a music room, a cigar lounge, and a jungle-inspired bar with inventive cocktails and a James Beard–nominated wine programme, inviting guests to feast and linger.

MEET THE TEAM

Restaurateur and founder-CEO Simon Kim fulfilled his dream of opening COTE Korean Steakhouse in 2017. The concept has earned numerous accolades under Kim’s direction, notably being New York City’s first Korean steakhouse and one of two Michelin-starred Korean tabletop grill restaurant in the world, alongside COTE Miami.

Chef David Shim leads COTE’s global concepts with Kim, following his notable career as master cook at the two-Michelin-starred L’atelier de Joël Robuchon and executive chef of JYP Entertainment-owned Korean restaurant, Kristalbelli. He now oversees COTE’s operations, menu conceptualization, and strategy.

A CUT ABOVE THE REST

Korean Hanwoo, USDA Prime, and Australian wagyu beef are selected for quality and character, then wet-aged, dry-aged or marinated to suit each cut. An in-house dry-ageing room forms part of the dining room, where beef is aged for a minimum of 45 days.

The Butcher’s Feast is a signature dining experience at COTE, offering high-grade prime cuts, seasoned with the house Gastronome’s Salt — a blend of Maldon, Celtic sea salt and Korean thousand-day aged sea salt — and complemented by a selection of house-made banchan, stews, and a savoury egg soufflé.

Grilling is carried out tableside on smokeless Shinpo Grills, which use ceramic charcoal to deliver steady heat.

POURED WITH PURPOSE

Beyond the cuts, COTE’s beverage programme is equally considered. A James Beard Foundation–nominated wine list of over 1,200 labels sits alongside a thoughtful selection of spirits, as well as low-ABV and non-alcoholic drinks tailored for Singapore — each chosen to complement the experience at the table.

LATE NIGHTS AT COTE

As the evening unfolds, COTE offers places to linger beyond the table. Millim, its jungle-inspired bar, serves cocktails shaped by Korean and American influences, alongside bar snacks such as the Singapore-exclusive Korean Oyster Omelette. The space also plays host to guest DJs, with sets spanning a range of genres that carry the night forward.

For those inclined to sing, Eumm — COTE’s music room — hosts private karaoke sessions, while Heuk, a discreet cigar lounge, provides a more contemplative setting for quiet indulgence.
