THE TRUE ART OF TEMPURA
At Ippoh Tempura Bar by Ginza Ippoh, tempura is guided by precision at every step. The batter is made from a simple blend of eggs, flour, and mineral water from Hokkaido — chosen for its ideal hardness, which allows the coating to form lightly without overwhelming the ingredient.
Safflower oil is used for its clean, neutral profile, allowing flavours to come through clearly. Each piece is fried individually, with temperature and timing adjusted to suit the ingredient.
The result is tempura that is crisp and light, with a finish that feels clean on the palate.
MASARU SEKI
Masaru Seki oversees Ippoh Tempura Bar, continuing a family tradition that spans more than 170 years.
His training followed a long-established system, where knowledge is passed down directly from master to apprentice. Even as part of the family, progression was measured—requiring years of observation before handling ingredients.
He ensures that the methods, discipline and standards of the Osaka restaurant are upheld at the Singapore outpost with consistency.
AYAME UTSUMI
Raised in Osaka and influenced by her father, a soba chef, Ayame Utsumi has a deep appreciation for the simplicity, seasonality and precision that define Japanese cuisine. Her decade-long experience across Japanese, Spanish and French kitchens informs a steady, measured approach, with particular care given to seasonal vegetables.
THE BEST OF SEASON
The menu is shaped by seasonality, with ingredients selected for their flavour and quality. These include Japanese produce such as matsutake mushrooms, Hokkaido corn and kisu fish, alongside seafood and vegetables chosen for balance.
Signature dishes include Live Shrimp with Shiso Leaf, crisp with a naturally sweet centre, and Shrimp Toast, made with a delicate minced shrimp filling. Sea Urchin Tempura with Caviar offers a richer expression, layering uni and caviar over crisp tempura seaweed.
Each piece is served individually, allowing it to be enjoyed at its best.
FOR PRIVATE CELEBRATIONS
Designed by Paola Navone of OTTO Studio, the space is defined by soft indigo hues—a nod to the indigo-dyed garments once favoured by samurai — alongside bamboo fixtures that reference traditional Japanese craftsmanship.
The space lends itself to private dining and small gatherings. At the counter, guests can witness the mastery of tempura up close, with each piece served in sequence.
